A year in review

2010 was a big year for me.

I consistently kept my nails painted
I lost a bunch of weight and gained it all back
I lost the Spring Sing championship trophy for the first time in my career
I watched the whole series of Dexter
I did not run once
I started reading books on my Kindle instead of real books
I ate more Marco's Pizza than most people will in their lifetime

Oh yeah, and I got married, graduated from college and began my PR career.

But most importantly, I learned all the state capitols.

Then I forgot them, but that's not important.

Tomato cream sauce

I live for tomato cream sauce. LIVE I TELL YOU!

So I created a variation of PW's "Penne a la Betsy" into what I call "Tomato Cream Chicken Pasta a la Katy" (remember- you must put your name into all of your original recipes....or give it a funny name.)

1 14 oz. can tomato sauce
3/4 cup heavy cream
2 chicken breasts pan fried in oil and butter
Cooked and drained Pasta (I used spaghetti, but I am a firm believer in using any pasta)
2 tbs of garlic (or 2 chopped cloves)
1 tsb basil
salt and pepper to taste
1 tbs olive oil
1/2 cup dry white wine

put olive oil in large frying pan
add garlic and cook for 2 minutes on medium
add wine and cook for 45 seconds
Reduce heat and add tomato sauce, simmer 2 minutes
Stir in cream
add basil
add pan friend chicken (whole or chopped)
add pasta
add salt and pepper to taste
Simmer on low for about 5 minutes until serving temperature is correct.

Easy Squeezy and delish!

Anti-hoarding

I think I'm the opposite of a hoarder. I give things up way too easily. If I haven't used it in a week, it's out the door!

Haven't worn that pair of black heels in a while? SEE YA!
Just finished the last page of that book? GOODBYE!
Three week old nail polish? Well that's a different story.

Santa was good to the Gustafsons this year. I carried home a lot of loot, and for those who live in tiny Dave Ramsey apartments like us? You know what that means.

"Where am I going to put all of this?"

Heck , I ask that question coming home from the grocery store. So, no I did not do the traditional After-Christmas Shopping, I am starting the traditional After Christmas CLEAN OUT! Some Goodwill shoppers aren't going to see it coming. I think I'm giving away some pretty great stuff. College T's, an iPod dock that I broke during Spring Sing (rage moment), Some holey sweats, an ALARM CLOCK!

Man, Merry Christmas old lady lookin' for a deal. You just got Gustified.
