I'm beginning to get the hang of being in the kitchen.
Since we are in end-of-the-month-empty-Dave-Ramsey-Envelope mode, I had to get creative with dinner last night.
Luckily, I had just purchased some boneless skinless chicken breasts. *Three items I abolutely must have in my kitchen at all times or meals are hopeless are as follows: Boneless skinless chicken breasts, 1 lb hamburger meat, 1 package of Johnsonville brats. If I have at least one of these items, dinner is definitely possible.*
So last night I had some time to whip something up , but I didn't have any more money to go buy a missing ingredient. I searched my cookbooks to find a recipe for something to make.
I finally found a recipe that called for some items I had in my pantry. I can only make something if I have at least 80% of the ingredients. If you are missing a vegatable, no biggie. A seasoning? Those can be substituted! So I got a little creative and made Chicken Green Bean Casserole!
1/2 chopped small yellow onion
4 cups cubed chicken
1 can cream of chicken soup
1/2 can cream of mushroom soup
1 package of Chicken and Broccoli Rice Sides
1/2 cup cheese
1 can green beans
Chopped green pepper (optional)
1 envelope onion souop mix (optional)
Preheat oven to 350
Boil chicken breast until cooked (about 25 minutes)
Cut up into bite-sized cubes
Make rice according to package
Chop onion
Mix in a large bowl: Soup, onion, chicken, green beans, rice
Pour into baking dish (preferably smaller than 9x13, but that works too)
Sprinkle with cheese
Bake for 25 minutes
Brody says he liked it, but after his first helping, he ate some leftover pizza.

ReplyDeleteI'll have to leave out both onions because Danny has the pallet of a 4 year old, but I think it'll still be good.
